Hearty Soup - Escarole & Bean
Ingredients:

Several Cloves Garlic

2 large cans Progress Brand White Cannelloni Beans

4 cans Chicken Broth
-
2 heads Escarole - wash, clean and cut up
Optional Ingredients:
Directions:
Sauté garlic in a little olive oil. Cook escarole in chicken broth
for 20 minutes, add beans, cook for 20 minutes, season to taste -- I like
to add some salt and crushed red pepper flakes.
Optional step: You can add sausage to this soup and make a hearty
full meal. Either fry sausage first or cut up small pieces and add to broth
in the beginning.
Serve with crisp Italian bread. Garnish bowl with a drizzle of virgin
olive oil and grated parmesan cheese.
